Japanese Cooking Class β Izakaya dishes
Izakaya food is a Japanese style of food typically served in casual taverns called izakayas. It consists of many small dishes shared at the table, such as grilled skewers (yakitori), sashimi, fried snacks and pickled vegetables. Izakaya food is made to pair well with drinks such as beer, sake and shochu, creating a cosy and social dining experience.
In the workshop, youβll learn practical techniques and gain insight into how to balance the flavours of classic izakaya dishes.
Shio Kyabetsu β A crispy and fresh cabbage salad with sesame oil and salt. Weβll show you how to balance simple flavours and make this quick side dish that is a classic at Japanese izakaya places.
Sunomono β A light and tangy cucumber salad with sweet vinegar. Youβll learn how to finely chop vegetables and flavour the dressing for the perfect balance of sweet and sour.
Mushroom Gyoza β Crispy fried dumplings filled with an umami-rich mushroom mixture. Weβll teach you how to fold the gyoza easily and fry them so theyβre crispy on the bottom and juicy on top.
Ohitashi β Blanched green vegetables in a light dashi with soy sauce. Youβll learn how to handle delicate leaves like spinach and make a quick dashi with a delicate umami flavour.
Namero β A traditional fish dish from Japanese fishermen, made with minced fish, miso and fresh herbs. Weβll show you the knife techniques and mixing method that turns fresh fish into a delicious tartar-like starter.

From May 15th and throughout the summer until the end of September, we open the doors to Norrlyst β Sommer pΓ₯ Volden in the iconic yellow house on Christianshavns Vold.
Here, you can enjoy lunch with our take on classic Danish smΓΈrrebrΓΈd or explore an evening menu that changes with the microseasons.
The first part of the season focuses on vegetables in collaboration with produce expert SΓΈren Wiuff, while the second half brings in fresh flavours from the sea β developed closely with Fiskerikajen.
Throughout the summer, weβll also be joined by a lineup of guest chefs β including SΓΈren Birch from Alimentum, Yves Le Lay from Γ‘ tarre, and Sylvester Andersen from SΓΈlyst, the Royal Shooting Range.

This weekend, DAMO cooks Polish.
On Friday and Saturday, Damian from DAMO joins forces with his good friend MikoΕaj from SYTO for a two-night takeover at Ancestrale. The focus β food rooted in memory, culture, and curiosity. This is their Polish kitchen: playful, seasonal, and full of soul.

The last time Forager visited the basement things got a little crazy so this time we will be opening the courtyard right across the street from peders. There will be tables, there will be benches, there will be good times. There will also be the premiere of the exhibition βTo peders, by pedersβ. Regulars, bartenders and other friends of the house have put in the effort to make this day eeeeeeven more special. The garden will be open from 10:00 until 19:30. The bar will be open till midnight as per usual.
Oooooooh yes β itβs Forager time! Weβre back at it again with our Beerweek Thursday Special. From Rochester, MN to SPS31.
This year however weβre also hosting the Worlds Best Homebrewers. At 16:00 this Thursday weβll have Westum (NO), Missionsbryggeriet (SE), Conscious Ales (US), Dekkera (US) and ΓllebrΓΈdre (DK) serve up beers. This will be a ticketed event with tickets and information about it being released April 1st β stay tuned.
Besides a ton of awesome beers on tap, weβll also have an ENOURMOUS Forager bottle list with more than 20 barrel aged Forager both for takeaway as well as drinking in-house.

A wine makers soirΓ©e with Sarnin-Berrux and Matassa
It gives us immense pleasure to invite you to an intimate soirΓ©e with winemakers Jean-Pascal Sarnin (Sarnin-Berrux, Bourgogne) and Tom Lubbe (Matassa, near Calce and north of Spain).
We will sit at two tables of 10ish, enjoy sharing dishes en masse, wines and of course many stories. It is like dinner at harvest without the blisters, sweaty shirts and a not having to the work the day after. Besides that almost the same.
The menu Is not decided, but will mainly focus on greens with interludes from the sea as well as some charcuterie, befitting the wines we will share.
There is no table plan, your group will be seated together with plenty of options to meet new friends, share a bottle or engage in fruitful conversations.
We will start at 19:00 and end when the Maitre D says good night.

Join us for wine, stories and seeing the local sights, when we embark on 2 hour tasting with winemakers Jean-Pascal Sarnin (Sarnin-Berrux, Bourgogne) and Tom Lubbe (Matassa, near Calce and north of Spain).
On the boat you will taste 10 different wines and we have prepared Jambon Beurre for you or Fromage Beurre as an option for the non carnivores.
The tasting will also includes alternative sightseeing stories and the option to have a beer for soothing your aura.
So bring your best striped shirt and we will provide the moustache.

After last yearβs sold-out debut, the panzerotti party returns to Copenhagen for its second edition!
We are 4 young people from the southern Italian region of Puglia, and for several years, we have made Copenhagen our home. Our bond with the world of food is deep and diverse.
Born from the love for Apulian tradition, Panzarot brings you the true taste of southern Italy: golden, freshly fried panzerotti with classic fillings like mozzarella, tomato, and oregano, plus savory meat options and an irresistible sweet version with ricotta and chocolate.
This year, weβre welcoming even more guests to Kitchen Collective, turning the space into a full-on Apulian celebration. Starting at 12 PM on Sunday, May 25th, weβll be frying panzerotti until sold out.
