Japanese Cooking Class – Classic Washoku
Washoku is traditional Japanese cooking that emphasises seasonal ingredients, balance and harmony in taste, presentation and nutrition. It often consists of rice, miso soup, vegetables and fish and reflects a deep respect for nature and Japanese cultural values.
This washoku cooking class focuses on the basic elements of traditional Japanese home cooking. Participants learn how to prepare a complete Japanese meal and are introduced to important techniques such as making dashi, flavouring rice and working with vegetables and fish.
Awase dashi is a classic Japanese broth made from kombu (seaweed) and katsuobushi (dried fish flakes). It forms the basis of many dishes. We’ll show you how to extract umami and make a clear and aromatic soup base.
Takikomi gohan is flavoursome rice cooked with vegetables, mushrooms and sometimes fish or chicken. You’ll learn how to bring the flavours together in one pot to create a fragrant and filling rice dish.
Ohitashi is a delicate spinach dish marinated in a light dashi-based sauce. We’ll show you how to gently cook vegetables to bring out their natural flavour and texture.
Saikyoyaki is a Kyoto barbecue dish with fish marinated in sweet white miso. You’ll learn how to make the marinade and grill the fish to make it tender and full of flavour.
Tsukemono are quick-pickled vegetables that add freshness and crispness to the meal. You’ll learn simple pickling techniques using seasonal produce and basic ingredients.
Nasu dengaku miso is grilled aubergine topped with a sweet-salty miso glaze.

Our next fællesspisning is coming up in just a few days and we already have a wonderful and seasonal, vegetarian menu for you!
Inspired by autumn – and our desperate need for hyggelige and warm food, we’re turning towards carrots and stews. More specifically, we’re having Ribollita with carrots.
This Tuscan bread soup is definitely gonna warm us up, but at the same time we’re also exploring different variations of carrots, an artichoke cream and of course fresh focaccia.

Johanne from @seoulmade.dk recently returned from Korea and finds herself longing for the simple dishes that speak through taste rather than formality. Her pop-up brings the kind of cooking you rarely see in restaurants: No fancy garnish – just great taste, beautiful produce and down to earth vibes.
For 190 DKK you get a composed tray featuring:
– Doenjang miyeok-guk – fermented soybean & seaweed soup
– Heukmi bap – classic Korean purple rice
– Mayak gyeran – soy-cured “drug egg” with jammy yolk
– Baechu kimchi – Seoulmade’s napa cabbage kimchi

Gochujang Workshop & Eat
Korean fermented chili paste, gochujang workshop by Haegeen Kim. Here you will learn two ways of making this well-loved paste from scratch and small jar to bring home to keep fermenting yourself. After the workshop stir-fried pasta with dukbokki sauce, autumn salad with gochujang vinaigrette, pancake and lastly gochujang cookie will be shared. Starts 5:30 until 8:30 and you can purchase wine separately.

But what’s the deal with these Savoie wines popping up everywhere? The French region has seen a major rise in popularity in recent years and it only keeps growing. The region is synonymous with mineral white wines and local grape varieties you might have tried without even knowing!
Join this Tuesday Tasting and dive into the history of the Alpine grapes together with Sebastian! As always, the tasting will feature 3 wines, and will last 1 hour. Don’t forget to arrive a bit early to order some food to accompany the wines! We start at kl 18 and the tasting will be in English. Booking is now open, find it through our website!
